Introduction
Make Me Eat presents Crispy Falafel Wrap Recipe, a homemade taste with golden crispy falafel, soft pita bread, fresh vegetables and a delicious tahini sauce.
Ingredients
1 cup dried chickpeas (soaked overnight, avoid canned)
½ cup onion, chopped
3 cloves garlic
½ cup fresh coriander
½ cup fresh parsley
1 tsp cumin powder
1 tsp coriander powder
1 tsp salt
½ tsp black pepper
½ tsp baking soda
Oil (for frying)
4 pita breads
1 cup lettuce, finely chopped
1 cup tomato, chopped
½ cucumber, finely chopped
½ cup tahini sauce
Method
Prepare the chickpeas
Drain the water from the soaked chickpeas. They should be soft but firm. Do not use canned chickpeas.
Make the mixture
In a food processor, add the chickpeas, onion, garlic, coriander, parsley, cumin, coriander powder, salt, black pepper and baking soda. Blend but do not make a paste. The mixture should be like sand.
Make the falafel
Shape into small balls or patties. If the mixture seems wet, refrigerate for 30 minutes.
Fry
Heat oil in a saucepan over medium heat (about 350°F). Fry the falafel for 3–4 minutes until golden and crispy. Remove and place on a paper towel.
Prepare the sauce
If you don’t have ready-made tahini sauce, beat together 2 tablespoons lemon juice with ¼ cup tahini, 1 garlic clove, salt, and 2–3 tablespoons water.
Make the wrap
Warm the pita bread slightly. Add lettuce, tomato, cucumber, and 3–4 falafel. Add the tahini sauce and wrap.
Serve
Serve immediately to keep the falafel crispy.
Servings and Variations
For extra flavor you can add hummus or garlic sauce.
Adding pickled vegetables or olives will make it even tastier.
For a lighter version, you can bake the falafel in a 375°F oven for 25–30 minutes.
Tortillas can be used in place of pita bread.
Leftover falafel can be stored in the refrigerator for up to 3 days or in the freezer for longer.
